The oliveyards extend over an area of 60 hectares - on average there are two hundred trees in each hectare - characterized by gentle hills and slight slopes at an altitude between 200-230 m. above sea level, in that part of West Sicily traditionally devoted to olive growing, situated among Alcamo, Calatafimi Segesta and Castelvetrano Selinunte. The secular olive trees, converted to organic agriculture since 1998, fall entirely in the “DOP Val di Mazara”.

Cultivars - predominantly Cerasuola, Nocellara del Belice, Calabrese, Oglialora e Biancolilla - are typical of the area’s geographical membership and the olives are harvested between October and November when they reach full maturity.
