Once grapes reach full natural maturity in the vineyards, which have been totally pruned by hand between December and January, harvesting occurs, in general between the second half of January and end of September.

The time of harvesting is determined by measuring the sugar, acidity and PH level of the grapes on the plant: that’s when the hand picking of the most precocious varieties begins - Chardonnay, Merlot, Pinot - and afterwards the latest ones - Nero D’Avola, Catarratto, Grecanico. The handpicked grapes are immediately delivered to the winery and processed under controlled temperature.
